SUPER snacks for your BOWL from #AskAmany
Ready, set, blue 42, blue 42, hike, hike!
Super Bowl Sunday means that the NFL season is officially over. I love football season more than any other sport season and always get a little blue once it’s over. However, Super Bowl Sunday gives us another reason to gather and grub. With party food being rich and indulgent, I thought I’d provide a recipe to sneak some veggies into the party without the kids (and possibly the adults) noticing. This is a fun play on a recipe most of us are already familiar with, Buffalo Chicken!
Buffalo Cauliflower Bites (& Ranch Dip below)
1 medium head of cauliflower, chopped into bite-sized chunks
1/2 cup flour of choice*
1/2 cup water or milk of choice*
1-2 teaspoons garlic powder
1 teaspoon cayenne pepper*
1/2 teaspoon salt
1 teaspoon olive oil OR melted butter
2/3 cup of hot sauce/ buffalo sauce*
>>> Preheat oven to 450 degrees. Combine flour, water (or milk), garlic powder, cayenne, and salt in a bowl and whisk until smooth. Toss cauliflower in batter, making sure to coat the pieces completely. Place on sheet pan (lined with parchment paper) and bake in pre-heated oven. Make sure to flip/shake halfway through.
>>> While cauliflower bakes, combine olive oil (or melted butter) and hot sauce in a large bowl and whisk. Once cauliflower bakes for 15 minutes, remove from oven and toss in hot sauce mixture, making sure to coat the pieces. Place back in oven for 25 minutes, until crispy (think hot wings). Allow to cool, and serve with ranch dip (recipe below)!
You can use any flour: all purpose, gluten-free, garbanzo bean, almond flour. Viewers choice. Same goes for the milk, should you choose to use milk.
Make sure to use hot sauce that has NO added oil. Check the ingredients. It should just be vinegar, water, spices, etc. I’m fairly certain Tabasco and Frank’s makes some that should work!
Adjust seasonings to taste. Add more cayenne if you want more of a kick in the batter.
1 cup of plain Greek yogurt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8- 1/4 teaspoon cayenne
1/4 teaspoon Worcestershire sauce
Chives, to garnish
>>> Combine all ingredients,except chives, in a bowl. Stir together. Refrigerate for at least 2 hours to allow ingredients to blend. Garnish with chives prior to serving. *Adjust spices to taste.
Need some more fun tips? I’ve got some for you!
- Cut up crunchy veggies, such as cucumbers, celery, zucchini, carrots, radishes, and bell peppers to serve alongside your dips. Replace half of the chips you would normally use with your crunchy veggies.
- Make your own tortilla chips: buy your favorite tortillas, cut them into wedges, throw in a pre-heated oven (350 degrees) bake for 10-12 minutes, rotating and salting halfway through. You can also do the same thing using pita bread!
- Use soda water or sparkling water as mixers for drinks instead of soda or pre-made mixes.
- If hosting the party, keep the food away from the TV to avoid mindlessly eating while the game is on.
